Chicken Salad with Crunchy Noodles
ENJOY THIS MUST HAVE SALAD WHICH IS LOW IN FAT AND CALORIES
Ingridents
SALAD MIX
MIX / TOSS TOGETHER
4-6 CHICKEN BREASTS, COOKED AND CUBED
1 ½ PACKAGES OF ANGEL HAIR SLAW OR 1 16OZ PKG OF SLAW MIX.
3 TSP. SESAME SEEDS
1 BUNCH OF GREEN ONIONS, CHOPPED
DRESSING…..
MIX TOGETHER…..
2 PACKAGES OF RAMEN / TERIAKI CHICKEN SEASONING
1/3 CUP OF OLIVE OIL
1/3 CUP OF VINEGAR
2-3 TSP. LITE SOY SAUCE
5 PACKAGES OF SPLENDA
1 TSP. WHITE PEPPER
1 TSP. BALSAMIC VINEGAR
JUST BEFORE SERVING, CRUNCH UP RAMEN NOODLES TOSS WITH SALAD MIX
NEXT STIR IN DRESSING AND SERVE
Greek Salad
The combination of juicy, ripe tomatoes and black olives is a classic partnership in Mediterranean cooking, but Greek cooks also add feta cheese for a contrasting salty flavor. Serves 4.
- 9 0z. feta cheese
- 9 oz. cucumber
- 9 oz. Greek kalamata olives
- 1 red onion or 4 scallions
- 2 large juicy tomatoes
- 1 tsp. honey
- 4 tbsp. extra-virgin olive oil
- 1/2 lemon
- salt and pepper
- fresh or dries oregano, to garnish
- whole wheat pita bread, to serve
1) Drain the feta cheese if it is packed in brine. Place it on a chopping board and cut into 1/2-inch cubes. Transfer to a salad bowl.
2) Cut the cucumber in half lengthwise and use a teaspoon to scoop out the seeds. Cut the flesh into 1/2-inch slices. Add to the bowl with the feta cheese.
3) Pit the olives with an olive or cherry pitter and add them to the salad bowl. Slice the red onion or finely chop the white and green parts of the scallions, and add to the salad bowl.
4) Cut each tomato into quarters and scoop out the seeds with a teaspoon. Cut the flesh into bite-sized pieces and add to the bowl.
5) Using your hands, gently toss all the ingredients together. Stir the honey into the olive oil, add to the salad and squeeze in lemon juice to taste. Season with pepper and a little salt, if wished. Cover and chill until required.
6) Garnish with the oregano and serve with the whole wheat pita bread.

White-Bean Basil Chicken Salad
2 cups cooked chicken, cut into strips or cubes
1 clove garlic, minced
1 19oz can cannelloni beans, drained and rinsed
3/4 c. lightly packed fresh basil leaves, torn or sliced into ribbons
2 TBSP fresh lemon juice
½ tsp Tabasco sauce
½ tsp black pepper
8 Butter Lettuce leaves
Mix all ingredients together, except lettuce, and serve salad in curled Butter Lettuce leaf cups.
This is easy, delicious, nutricious, healthy and the salad travels well for picnics, to potlucks and carried in in lunch boxes. Protein, flavor and texture, all in one simple salad. Donna.
